It seems like life just keeps getting crazier and crazier – which is why I haven’t written a Loving Lately post in a while (here’s the last one). But with so much going on there’s bound to be things to love in the mix and I am sharing five of those things with you today, starting with…

Avocados

I mean, avocados are the best. They are good for breakfast, lunch, and dinner, cooked and raw, and this is a fact that has been undisputed for some time. But recently I have started using them to solve a very troubling problem I have had for some time, and that is that I detest bananas but love thick, creamy smoothies. Not following me? Almost every smoothie recipe out there includes a banana to thicken it, and since I would rather take a punch in the gut than eat a banana I’ve been slurping thin smoothies – until now. Avocados will thicken up a smoothie right up without any nasty banana flavor. This is my favorite smoothie right now.

Taco Sauce

Someone left a bottle of this Ortega Taco Sauce at my house a few months ago and I am hooked. I love how smooth it is, and I’ve been using it like dressing on taco salads. Perfection.

Cauliflower Rice

I have to admit I was skeptical when first I learned of cauliflower rice, but now I’m a believer. There’s not a trace of doubt in my mind. I’m in love, I’m a believer, I couldn’t leave cauliflower rice if I tried. I’m working on a recipe for stir fry over cauliflower rice to share with you soon, so now you have that to look forward to.

The Enneagram

Ever since I read this book I have been fascinated with the enneagram. It was eye opening for me in a lot of ways and I can’t wait to learn more about it. I have my eye on this book and this one.

  1. Can you please tell me how to know when the avocado is ripe? I live in India and here, avocados are not that easily available. i did manage to get my hands on some a few weeks back and waited for it to turn black. I have seen in many cooking videos that you should use when it turns black. But when mine turned black it was alredy rotten. 🙁

    • It’s very tricky! I wait until mine are a dark brownish color and use the ‘squeeze test’. When you gently squeeze it you should feel a little give, but it shouldn’t be mushy. When you cut it open it should be soft and green, not hard or black and rotten. It might be a little bruised in some spots but that doesn’t usually bother me. Hope that helps!

  2. Cauliflower rice has changed my life! LOVE IT! I use it frequently in place of rice, which means an extra serving of veggies without feeling overwhelmed by veggies. Ditto for zucchini noodles!

  3. Ooh cauliflower rice! I’ve never tried that. I love cauliflower vs. Broccolli, any day. I love anything vegetables and being Asian we love our rice but the calories in rice is crazy. We eat it at every meal, and it’s not a side so we eat a lot of it one sitting. Definitely nice to find other ways to incorporate rice but a side and with a subsititute. Thanks for sharing!

  4. I’m with you on the avocado. We love them, especially to large Florida ones. Cauliflower rice…nah. Love cauliflower, but the rice is taking it too far for me.

    • I read yours and I’m totally with you on the bug thing…they fly right past everyone else and congregate on me, no lie. And then all insect bites and stings swell up like crazy and take days or weeks to go away. Glad you got your problem fixed!
