Carrot Citrus Smoothie

You guys, I am so excited about the Sneaking In Veggies series of recipes I am doing this month! Picky eaters of every age will be fooled by the yumminess of these healthy, veggieful recipes – starting right here, right now with this Carrot Citrus Smoothie!

The girls and I have been drinking this smoothie a lot here lately, and I love it because it has a nice helping of carrots in it (hello, healthy eyes!) but it basically tastes like a slightly less sweet version of an orange dreamsicle. Honey is listed as optional for this recipe because we like it just fine without, but if you want it to be a little sweeter go for it! Gauge it according to your own smoothie preferences.

Start with carrots, yogurt, orange juice, and milk. Honey (not pictured) is optional.
Dump it all in your blender and get ready to grind. I have to stop and rave for a minute about this blender. I just got it for my birthday a couple weeks ago and I am obsessed.  I got the BL682 model which comes with a food processor (haven’t tried that part yet) and the individual smoothie cups (tried those, adore them).
I’ve been making smoothies almost every day. It makes them sooo silky smooth, I just can’t even.

Blend until there are no more big chunks of carrot and serve cold. Cute straws optional, but recommended.

Carrot Citrus Smoothie
Prep Time: 10 minutes
Serves 2 (16 oz each)

1 1/2 cups cooked sliced carrots (about two large carrots)*
1/2 cup plain yogurt
1 1/2 cups orange juice
1 cup skim milk
2-3 Tbsp honey (optional)

Place all ingredients into a blender in the order listed and blend till combined. That’s about 20 to 30 seconds on high for my blender, but will vary blender to blender. Enjoy for a quick breakfast, snack, or lunch!

*Cook carrots ahead of time and allow them to cool in the fridge before using in the smoothie. They stay good for about 5 or 6 days in the fridge, so you can even make a big batch and have them ready to go for several smoothies throughout the week.
