Who likes s’mores? Everyone? Just as I suspected. What about cupcakes? Lots of hands in the air for that one too? Not surprising. In light of the results of that in-depth survey, I give you S’mores Cupcakes!
These cupcakes are super simple to make. It only took me about an hour to bake the cupcakes, make the icing, and put them all together, and they don’t require any kind of special skill or equipment. Cupcakes are my go-to when I need a dessert to share because they are already portioned out and ready to go, and the summery s’more flavor of these makes them great to take to cook-outs and pool parties!

Prep Time: 1 hour
Makes 2 dozen
24 chocolate cupcakes, prepared from your favorite cake mix or recipe
2 sticks of butter
1/2 tsp vanilla
4 1/2 cups powdered sugar
2 7oz containers marshmallow fluff
3 graham cracker sheets
Bake chocolate cupcakes according to your favorite recipe or cake mix and let them cool. For the frosting, beat together the butter and vanilla, then gradually add in the sugar until combined into a very thick, lumpy looking frosting. Then beat in the marshmallow fluff, one container at a time. Transfer the frosting to an icing bag and pipe onto the cupcakes using any large tip you want. Be prepared to squeeze hard, this stuff is thick and sticky! Break the graham crackers along all the perforated lines, then break each small rectangle in half. Top each cupcake with a chunk of graham cracker and cool until the icing is set. Store in the refrigerator.
