Lemon Poppy Seed Cookies

Some food are just better as combos, and one of my all time favorite flavor combinations is lemon poppy seed. Pretty much everyone in the universe has probably had a lemon poppy seed muffin at some point in their lives, so today we are going to take it a step further with these super simple Lemon Poppy Seed Cookies! And they are cake mix cookies!

If you are not familiar with cake mix cookies, let me educate you right quick. Cake mix cookies are awesome. The whole idea is that you add wet ingredients to a pre-packaged cake mix to make extra soft, extra fast cookies. And there are tons of variations possible with this concept. The most basic is the Chocolate Chip Cake Mix Cookie, but today we are going to get just a little fancier.

These cookies are sweet and lemony, and the glaze really puts them over the top. They only take about 10 minutes to mix up and 10 minutes to bake, so they are indisputably simple and fast. The hardest part is being patient while they cool enough to glaze! But you can do it. I have faith in you.

The only downside is that one batch doesn’t make a ton of cookies, so if you are baking for a crowd consider doubling or tripling the recipe.

Lemon Poppy Seed Cookies
Prep Time: 10 minutes
Bake Time: 10-12 minutes
Makes 16-20

1 box lemon cake mix (this one is my favorite)
2 tsp poppy seeds
1/3 cup canola oil
2 eggs
3/4 cup powdered sugar
4 1/2 tsp lemon juice

Preheat oven to 350ºF and line a pair of baking sheets with parchment paper. In a medium sized bowl stir together the cake mix and poppy seeds. Add in the oil and eggs and stir until combined. Drop by rounded tablespoons onto the prepared pans and bake for 10-12 minutes, until the bottoms are a light golden brown. Remove from the oven and allow them to cool for about an hour. When they are cool, stir together the powdered sugar and lemon juice and drizzle over the cookies. Let the glaze dry and harden for 10 – 15 before stacking and storing.

  2. one of my favorite flavor combos, too! I have to cook gluten free for my daughter. I think I’ll try to find a g-free cake mix for these and make them! Thanks for the recipe!

  3. I love lemon and especially love this twist on my favorite muffin flavor! Love that it uses a box mix because that is about the only way I bake my cookies for simplicity and ease. My daughter who loves to bake is going to make these…and I get to eat them! LOL
