Cake Mix Cookies

Lazy person cookies. That’s what these are in a nutshell, but I make them all the time and I am not ashamed. They’re made up of only five easy-to-stir ingredients and none of the butter softening and beating in stages stuff that comes with classic chocolate chip cookies. Not that the classics aren’t delicious, but sometimes you don’t want to deal with all that, and for those times I give you Cake Mix Cookies.

Mix everything together in one bowl. The result is a strangely textured mixture somewhere between batter and dough. See how stretchy it is?

Drop onto a parchment lined cookie sheet and prepare to bake.

Stack artfully and admire for just a moment before you eat them.

Cake Mix Cookies
Prep Time: 5 minutes
Bake Time: 10-13 minutes
Makes about 20

1 box yellow cake mix
2 eggs
1/3 cup canola oil
2 Tbsp water
3/4 cup chocolate chips

Preheat oven to 350. Mix up the cake mix with the wet ingredients then add the chocolate chips. Drop in rounded heaps onto a parchment lined baking sheet and bake for 10-13 minutes, depending on how big you made them. Look for the bottom edges to be lightly browned. Remove from oven and allow to cool on the pan for about 5 minutes, then enjoy or store in an airtight container for up to a week.

Variations:

Peanut Butter Oatmeal Cake Mix Cookies – add 1 cup of peanut butter and 1/3 cup instant oats.

Double Chocolate Cake Mix Cookies – sub chocolate cake mix for yellow and white chocolate chips for semi sweet.
