Potato soup will always be a comforting family favorite, and is really one of the few meals that every member of my family will eat without complaint. I recently updated the pictures but left my original comments and did not adjust the recipe. I also still always serve it with a mound of garlic cheddar biscuits. Why reinvent the wheel?
I don’t know how things are in your part of the world, but November is soup season here in Tennessee. The leaves are falling, the temperature is getting steadily cooler, and there is no better comfort food on cool night than a hot, hearty bowl of soup. And this thick, creamy recipe for Potato Soup is nothing if not hot and hearty.
Truth be told, we actually eat potato soup year round, but the frequency and enjoyment of it definitely begins to increase this time of year. This is actually my husband’s favorite soup (or maybe tied for favorite with broccoli cheddar soup). And nine times out of ten I also make garlic cheddar drop biscuits to dunk in it. When I was a kid my mom always made cornbread to go with our potato soup but I don’t because A). Nobody makes cornbread as good as my mom, and B). my husband and I disagree on how cornbread should be prepared. He likes it sweet…I do not. Sweet cornbread makes me gag. But I digress…
If you like filling comfort food on a cold winter night and aren’t scared of a few carbs, then make this potato soup (and the drop biscuits)! You won’t be sorry. And don’t be afraid to load on the toppings. We usually just top our potato soup with cheese but bacon bits, chives, and sour cream are also fabulous if you happen to have some on hand.
- 4 tbsp butter
- 1/2 medium onion, diced
- 4 tbsp flour
- 2 cups chicken broth
- 1 1/2 cups water
- 3/4 cup milk
- 5 cups potatoes, peeled and sliced
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 cup cream
- Shredded cheddar cheese (optional)

Melt butter in the bottom of a large pot. Add onion and sauté until onions are soft and beginning to brown around the edges. Whisk in flour, then whisk in broth gradually to prevent lumps. Stir in water, milk, salt, pepper, and potatoes. Bring to a boil and cook until potatoes are soft (about 20 minutes), stirring frequently to prevent sticking. When potatoes are soft, remove from heat and use a potato masher to break up the potato slices until desired consistency is reached. Stir in cream and serve immediately, topped with cheese if desired.
