When Julie sent me a copy of her new cookbook I immediately made a list of recipes that I wanted to try. First up was her recipe for Spicy Black Bean & Avocado Roll-Ups. Though it’s technically listed as an appetizer, I made a batch to keep in the fridge and enjoyed these roll-ups as a quick and easy lunch over several days. Two thumbs up for that recipe! Next on my list to try will probably be the Veggie Avocado Egg Salad, followed by the Balsamic Mozzarella and Veggie Cold Pasta Salad. There are several more that I can’t wait to try, but if you want to see them you’ll have to get her book!
Even though we are not a hybrid household I can see how valuable One Dish, Two Diets would be to households with both meat-eaters and vegetarians. For my own situation, I think this cookbook is going to go a long way towards helping me add more veggies into my diet this year. I can’t wait to try several more of these delicious recipes, including a few dessert recipes – because you guys know I love me some desserts.

What a great idea for a cookbook!! We both eat meat in our house, but I have been trying to do meat free meals more often. My husband puts up a fuss though, so may have to try some of these!
Yes! Your comment pretty much describes my situation as well. Meat can get expensive, so I try to do a few meat-free meals per week and I think this book might help with that.

Wow, this book sounds awesome! I do not mind eating vegetarian although I do eat meat from time to time, but I am sure this book will have tons of fun hybrid recipes.
