What I’m Loving Lately – March 2018

I don’t know how February felt for you guys, but I thought it felt like riding on a comet. We were everywhere at once with about 3.6 billion things to do and no time to do them. What’s my point? I never did a Loving Lately post in February and I didn’t even realize it until I was halfway through March. Whoops. Since it’s been a hot minute since I last wrote something not related to reading or eating, I thought I’d update you on what’s up in my world.

The big news is that starting Monday I am going to be working at a ‘real job’ for the first time in about 5 1/2 years. In case you wonder what I mean by ‘real job’, I mean I’ll have to pack a lunch, put on actual pants, and drive somewhere to do work.

What will I be doing, you wonder? I’m going to be working for my husband! He is stepping out into the world of business and who better than me, his other half, to ensure that this venture is a success? So starting in April I’ll be working in his office part time doing customer service/secretarial tasks, but that does not by any stretch of the imagination mean that I’m giving up blogging. I have cut back on my posting a schedule a bit in the last few months in preparation for this busy season of our lives, but I think my plan from here on out is to just not sleep that much and also not exercise and probably eat a lot of prepackaged food so that I have time to keep pumping out the posts for my favorite child Read. Eat. Repeat.

Does anyone have any better suggestions? Because I have a suspicion in the back of my mind that my plan might not be sustainable. I haven’t even started yet and I’m already like “How do these other moms do it?” Seriously, if you have tips for being a supermom with a job, blog, family, and church responsibilities spill them where I can see them because I need something. I’m not sure what, but definitely something.

That little update leads me to the first item on my loving lately list:

The Lazy Genius Podcast

Hosted by Kendra Adachi, this podcast is my new favorite thing about Mondays. Her tagline is ‘Helping you be a genius about the things that matter and lazy about the things that don’t’. I want to be put on the wait list to be her new BFF if that position ever comes open. She is so real and funny, and I’m especially enjoying the series about cooking that she’s been doing this month. There are five episodes about chicken, soup, bread, salad, and roasting stuff, and I have picked up some great tips that I’ve already been playing around with. I feel like becoming a lazy genius might need to be my only hope for doing all the things I want to do in life.

Recipes

I have two stellar recipes to share with you. The first is this Baked Chicken Parmesan from Olive Jude. I can’t get enough of this stuff! I make it exactly like she has the recipe written, except I add extra croutons because more carbs = better always. It’s soooo good, and tasty leftover, too.

The other recipe is for a Cream Cheese Stuffed Red Velvet Bundt Cake with White Chocolate Ganache. I know that’s a mouthful (pun intended), but I made this for my mother-in-law’s birthday a few weeks ago and it was amazing. I can’t vouch for the quality of leftovers for this one because there were none. We ate the. whole. cake. and there weren’t that many of us at this little party. Everybody had seconds because it was delicious but not too rich. It really was just right.

My first ever viral pin!

I’m sure everyone is tired of hearing about this by now, but I’m still basking in the glow of excellent luck, so I’m including it anyway. Last week the pin for my Double Chocolate Peanut Butter Muffins went viral and has been pinned over 11,000 times since then. At first I thought something was wrong because my site views were so high, but my blogging friends assured me that all was well, so I just sat back and enjoyed the view windfall for a few days before it started to ebb.

 

$3 jeggings

Yesterday I walked into Walmart to buy office supplies (for the new job I was telling you about) and I walked out with a pair of jeggings that were on sale for a whopping $3. I should have gotten at least 2 or 3 pairs because I’m pretty much planning to live in them for the rest of my life now. They feel like leggings but look like real jeans! I’ve never been so in love.

  1. March was so busy for me personally. The first week of April will be just as busy. The third week of April is going to be awesome since we are taking off on vacation.

  2. Congrats on your new role! I’m sure working with hubby will be fun – I worked with hubby for 5 years (before we were married though!). Your baked chicken dish looks absolutely fab!
