Peanut Butter Chocolate Chip Power Balls

What makes a perfect quick and easy healthy snack or breakfast on the go and only takes ten minutes to make? If you answered Peanut Butter Chocolate Chip Power Balls then ding-ding! You are a winner, my friend.

These power balls are both a blessing and a curse. On the one hand, they taste great and they are a super easy way to get some protein and fiber on the go. On the other hand, every time I turn around they are gone again, which is kind of annoying. I say all that to say this: when you make your power balls you might consider making a double batch.

One of my favorite ways to eat power balls is as an accompaniment to a smoothie. My kids favorite time to eat them is right after school (or any other time, to be honest). Since they’ve been such a hit I’m currently brainstorming a few more variations to try. I feel like power balls could take the world by storm and I want to be ready. I’m thinking maybe something extra chocolatey? Maybe something with maple and cinnamon flavors? Coconut and walnut chunks? The possibilities are endless.

Ingredients
  • 1/2 cup peanut butter
  • 3 tbsp honey
  • 1/4 tsp vanilla
  • 1/4 tsp salt
  • 1 1/4 cup oatmeal
  • 1/3 cup chocolate chips
Instructions
  1. Line a small baking sheet with wax paper and set aside. Stir together wet ingredients plus salt, until smooth. Add in oatmeal and chocolate chips and stir again until completely combined. Use your hands to roll the mixture into 12 even balls and place them on the lined pan. Refrigerate until firm, about 30 minutes. 

Recipe Notes

These power balls can be stored in the refrigerator or at room temperature, but we prefer them chilled because they hold their shape better and are a little less messy to eat.

  5. It’s so amazing that such a simple recipe could be so great but they are! I’ve used dates before as the sweetener and almond butter. I have one kid who’s not a fan of too much peanuts butter. Lol
