Hello, friend. Do you like a tasty breakfast? What about a healthy breakfast? Or perhaps an easy breakfast?

What if I told you you could have it all?

That’s what I love about overnight oats – they are the trifecta of tasty, healthy, and easy. And there are so many variations to try! I’ve shared a few recipes before, like one for Pumpkin Pie Overnight Oats or this one for basic overnight oats. But today we are going to let the spotlight shine on my new favorite, Maple Walnut Overnight Oats!

Why is it my new favorite? I’m glad you asked. I’m wild about the sweetness of the maple syrup contrasting with a tiny amount of salt. I adore the crunch of the walnuts mixed in with the soft oatmeal. I love that they are creamy and wholesome, since maple syrup is a natural sweetener and oatmeal and walnuts are a great source of protein, iron, and fiber.

If I haven’t convinced you by this point, the only remaining hope for you is that you will be persuaded as you look at the delicious pictures that follow. And one last note: you can use any kind of milk that you want for this recipe, including non-dairy, which I do often. But if you want to have heart eyes and hear birds sing as you eat, consider using 2% or whole milk in this recipe. It’s so good, you guys.

Ingredients
  • 3/4 cup oatmeal
  • 2 tbsp chopped walnuts
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 2-3 tbsp maple syrup
  • 1 cup milk, any variety you prefer
  • 1 tbsp maple syrup and/or walnuts, for optional garnish
Instructions
  1. Add dry ingredients to a pint sized mason jar or other similarly sized container with a tightly sealing lid. Add maple syrup and milk, close tightly, and shake to combine. Refrigerate about 6-8 hours or overnight. Garnish with additional syrup or walnuts if desired.

  1. Your recipe would be just as delicious cooked like regular oatmeal. The walnuts pack a great nutritional punch. This is easy to make gluten free, dairy free, vegan or even nut free…a great option for everyone.

  2. This looks sooo good, I’ve been struggling with having to figure out breakfast every morning for the toddler and I. I think we’ll both love this! Do you reheat in the morning or just eat it chilled? #wanderingwednesday

    • We just eat them cold, but I’ve heard others say they heat them in the morning. You’d just have to try it and see which way you like better!
