Cow Patty Overnight Oats

The other day I was thinking about cow patty cookies (I think about cookies often) while I was eating my lunch. My lunch that day just happened to be overnight oats, which are a favorite of mine because they are so easy and yummy. As I ate and thought it dawned on me that the chocolate peanut butter oats I was enjoying were very similar ingredients-wise to a cow patty cookie. And at that moment I decided to share with you a recipe I have long enjoyed but heretofore didn’t have a cute name for, and Cow Patty Overnight Oats were born.

These overnight oats of course share the same desirable characteristics of all overnight oats – in other words they are quick, healthy, and wonderfully portable. But the reason this recipe is my favorite is because the chocolate is delicious and the peanut butter complements the chocolate and makes this meal extra filling. I take them to work for lunch all the time and occasionally have some ready for a quick breakfast. They really feel like a treat to me even though they are pretty healthy, and so far I’ve never gotten tired of them.

The other great thing about them is that you can customize them to fit your taste. Add more honey if you like it sweeter or double it up for a larger portion size. I like to use almond milk to keep things leaner, but occasionally I’ll splurge on some 2% real milk and make it extra creamy. I also sometimes swap out the peanut butter for almond butter, just to keep things lively.

Two more notes and then we’ll get to the recipe: 1. I’m not generally very brand loyal, but Hershey’s Special Dark is my favorite cocoa forever and ever. 2. In case you don’t know what a cow patty cookie is, they are no-bake cookies full of chocolate, peanut butter, and oats that you make on the stove top. Ingredients
  • 1/2 cup quick cooking oats
  • 1 tbsp cocoa
  • 1 tbsp peanut butter
  • 2 tsp honey
  • 1 tbsp mini chocolate chips
  • 1/2 cup milk, any variety
Instructions
  1. Add all ingredients to a half pint sized mason jar, put the lid on, and shake to combine. Refrigerate 4 hours or overnight. Top with additional chocolate chips if desired.
