If there are two things in this world that I really love, it would be s’mores and pancakes. So when I found myself brainstorming new breakfast recipes one day it just seemed like a natural next step to combine those two into S’mores Pancakes. And the next thing I knew, a new breakfast favorite was born.
These s’mores pancakes are seriously easy and delicious. We played around with them quite a bit to find the right ratios of chocolate and marshmallow, and in the end we decided on combination of mini/regular chocolate chips, and mini marshmallows/marshmallow creme. That much experimentation was a chore, but it was a burden my family gladly bore to bring you this scrumptious recipe 😉

Side note: I always cook pancakes on my Presto electric griddle (affiliate link). If you don’t have an electric griddle I highly recommend that you consider purchasing one, because they are fabulous. I use mine all the time and I love this particular model because it has removable handles that make it easy to store.
And just in case pancakes aren’t your thing, here are some of our other non-pancake breakfast favorites:
- 1 cup pancake mix or self-rising flour
- 1/4 cup sugar
- 1 egg
- 3/4 cup milk
- 1 whole graham cracker, finely crushed
- 1 cup mini marshmallows
- 1/4 cup mini chocolate chips
- Marshmallow creme for topping
- Chocolate chips for topping

Heat a nonstick pan or electric griddle on medium heat. Whisk together pancake mix, sugar, egg, and milk until smooth. Stir in crushed graham crackers, mini chocolate chips, and mini marshmallows.
Divide batter into 6 separate pancakes on your griddle and cook about 3 minutes on each side. When the pancakes are done, move to a plate and top with marshmallow cream and chocolate chips in whatever is your desired amount. If you are stacking more than one pancake put a little between each layer for maximum yumminess.
