You know how there are some foods that make great natural pairings, like chocolate/peanut butter or cinnamon/apples? I think red velvet and white chocolate fall into that perfect pairing category. With that in mind, I created a recipe for Red Velvet White Chocolate Brownies that subbed white chocolate frosting for the traditional cream cheese you would usually find with red velvet. Combine that with the white chocolate chips sprinkled throughout the brownies themselves and you are in for a treat.
I think part of the reason red velvet appeals to me is that it’s usually so visually attractive. That vibrant red color is so pretty! Especially when it contrasts with the white in the frosting. Do you think pretty food tastes better? I say not always, but a lot of the time it does!
Of course, the other reason they appeal to me is that they are dessert. I have a massive sweet tooth, so any kind of dessert has a good chance at being a hit with me, as long as it doesn’t have bananas in it. You can keep your banana pudding and banana splits, I’m not a fan.

This recipe is loosely based off one of my other favorite brownie recipes from Life, Love, and Sugar. I do like a good fudgy brownie but I have to add the disclaimer that when I try to double her recipe I sometimes have issues with it getting too crispy around the edges and not all the way done in the middle. But if you want a plain fudgy brownie without the red coloring and white chocolate then this is good option if you use the 8×8 instructions.
Want a healthier option? I also have a recipe for Black Bean Brownies that have no flour and just the smallest bit of sugar and they are pretty delicious too, if I do say so myself.
- 1 stick butter, melted
- 1 1/4 cup sugar
- 2 tbsp cocoa
- 1/2 tsp vanilla
- 1 tbsp red food coloring
- 2 eggs
- 3/4 cup flour
- 1/2 cup white chocolate chips
- 1/2 cup white chocolate chips, melted
- 3 tbsp butter, softened
- 1/4 tsp vanilla
- 3 cups powdered sugar
- 3-4 tbsp milk

Preheat oven to 325ºF and line an 8×8 baking pan with parchment paper.

Whisk together melted butter, sugar, cocoa, vanilla, and coloring until smooth, then whisk in the eggs one at a time. Stir in the flour just until combined and then fold in the chocolate chips. Spoon into prepared pan and bake for 30 minutes.

When the brownies are cooked lift them out of the pan by gripping the parchment paper and allow them to cool for at least an hour before frosting.

For the frosting, beat together the melted white chocolate, softened butter, and vanilla until smooth. Beat in the powdered sugar a little at a time, alternating with the milk until you have reached a smooth, spreadable consistency.

Spread the frosting on the brownies and serve or store refrigerated in an airtight container for up to a week.
