Healthy Peanut Butter Fudgsicles

Summer time is here and that means it’s time to think about cold treats for the family. Now, popsicles are great, refreshing dessert for all ages. For the age range of my kids this summer (4 and 6), popsicles are an especially popular treat. We like all kinds of homemade popsicle flavors, but the best ones are the fudgsicles.

We are very much a PB + chocolate kind of family, so when I decided to develop a healthier, cheaper version of store bought fudgsicles, I knew I needed to throw in a little nuttiness. So these frozen delights are pretty equal in flavor between the peanut butter and the chocolate, which is perfect if that is your signature flavor combo like it is ours. I’m pretty sure my older daughter has never gone more than one day without peanut butter since she was old enough to eat it. It’s a food group for her.

And just for the record, I speculate that you could sub other nut butters for the peanut butter if allergies are a part of life for you, but I haven’t actually tried it, so that’s my little disclaimer. If you do try it with other butters, let me know! I think it would be delicious with almond or cashew butter, so that’s next on my list of things to try.

If fruity flavors are more your thing, another cold treat we really enjoy is Strawberry Lemonade Slush. It only requires 4 ingredients that you probably already have, and only takes 5 minutes to make! It’s hard to choose between the slush and the fudgsicles sometimes.

A quick note about popsicle sticks:

I don’t really like to use the plastic toppers that come with popsicle molds because it’s difficult to get the last little bit of popsicle off the bottom, and they can be kind of hard to clean. So instead I use regular popsicle sticks, which means there is an extra step in preparation. Since the fudgsicle mixture is too thin to hold up the stick when you first pour it in, you’ll have to set a timer and add the sticks about an hour into the freeze time when it has solidified enough to hold them. That’s just a personal preference though, so if you aren’t a fan of extra steps (I’m often not), just use the plastic ones.

A quick note about yogurt:

Plain yogurt is the base for this recipe and I like to make my own because it’s so cheap to make a huge batch. I’ve been using this recipe for crockpot yogurt from my friend Shannon’s blog for a couple of years now, and it’s the best!

Ingredients
  • 1 1/4 cup plain yogurt
  • 3 tbsp cocoa powder
  • 3 tbsp creamy peanut butter
  • 3 tbsp honey
  • 1/4 tsp vanilla
Instructions
  1. Place all ingredients into a blender or food processor and run until smooth.

  2. Pour into popsicle molds and freeze for 3 hours.

  1. Any chance you have a carb count on this specific recipe? I’d love to try this with my three kiddos but my youngest is diabetic and I have to dose insulin for all the carbs he eats. It’s one of the unfortunate downsides to making things homemade instead because I then have to guess the sugar content! But otherwise these sound amazing and I think my kids would really enjoy them this summer!

    • I’m sorry, I don’t. It partially depends on what brands of ingredients you use so I always recommend people add up the carbs, calories, etc. themselves for accuracy – especially in your case where it’s really important to get it right!
