You scream, I scream, we all scream for ice cream pie! With layers of chocolate cookies, ice cream, and hot fudge sauce, this masterpiece is basically a huge sundae that’s all ready for you to cut up and share! But, I mean, you don’t have to share if you don’t want to…I certainly wouldn’t judge you.
Up until just the last day or two it has remained hotter than blue blazes in East TN, inspiring me to invent a new dessert option that didn’t require firing up an oven. Ice cream pie became especially attractive during the second week of August, when our air conditioner gave up the ghost during a particularly high heat wave. Setting the ice cream out to soften only took a few minutes that week.

Once I hit on the idea for an ice cream pie we tried it a couple of different ways, experimenting with flavors and textures. While I have a few more combinations that I’ll probably be sharing later on, the immediate winner was the Cookies & Cream combination. Of course, it could just be that I have a soft spot for Oreos.
My secondary motivation for developing this recipe was to be able to use the pie dishes my mom got me for my birthday this year. You’re the best, Mom! The internet loves you and thanks you.

To be honest, though, there’s never really a time when I’m not down for dessert. I also really like guacamole, hamburgers, and fajitas, in case you were planning to invite me over for dinner and weren’t sure what to fix. If you do invite me over I’ll bring along an ice cream pie as my contribution to the meal.

- 12 chocolate sandwich cookies, finely crushed
- 4 tbsp butter, melted
- 1.5 qt carton cookies & cream ice cream, softened
- 1 11.75 -12.8 oz jar hot fudge sauce
- 6 chocolate sandwich cookies, coarsly crushed

Set out carton of ice cream to soften while you prepare the crust.

Finely crush cookies in a food processor and stir in melted butter. Press into the bottom of a 9.5 or 10 inch pie dish and freeze for 10 minutes.

Remove crust from freezer and spread softened ice cream into the dish, making the top as smooth as possible. Freeze for 1 hour.

Remove pie from freezer and spread hot fudge sauce over ice cream. Sprinkle crushed cookies over fudge sauce and freeze for 1 more hour.

To serve: Remove from freezer and let it sit at room temperature for about 10 minutes before slicing.
