I don’t know why I’m so obsessed with pancakes…
Oh, wait, actually I do.
It’s because they are a quick, inexpensive crowd-pleaser with almost inexhaustible options for customization. Confession: I actually make pancakes for dinner at least twice per month. Although I suppose it only counts as a confession if I’m embarrassed about it, which I’m not. Sometimes at the end of a long day of work, school, and dance class you just need to make a 20 minute dinner that none of your kids will complain about, and for me that dinner is pancakes. And also nachos, but we’ll talk about that another time.
That brings me to my latest pancake favorite – Hot Chocolate Pancakes! These pancakes are so tasty and are actually very filling. I will be the first to admit that they are not anywhere on the health food spectrum, but even that has it’s benefits. When you make Hot Chocolate Pancakes for dinner you don’t even have to serve dessert afterwards! Clever, I know.
Although we’ve been eating these pancakes all summer, they really put me in mind of a cool weather comfort food, probably because nobody sips hot chocolate in July. They would be the perfect addition to your weekend breakfast rotation (or a busy school night dinner, as mentioned above). And while I’ve got you in a pancake frame of mind (which is really good place to be mentally), I’ll just go ahead and tell you that when we aren’t eating Hot Chocolate Pancakes we are probably eating S’mores Pancakes or Triple Chocolate Peanut Butter Pancakes. And I will neither confirm or deny the possibility of another pancake recipe coming in the not too distant future.
One can never have too many pancakes.

- Mixing bowl

- Electric griddle <— this thing will absolutely change your life
- 1 1/2 cups all-purpose flour
- 1/3 cup sugar
- 1/4 cup cocoa
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 1/3 cup milk
- 1 cup mini marshmallows
- 1/3 cup chocolate chips
- 1/3 cup heavy cream
- 1/2 cup chocolate chips
- 3/4 cup mini marshmallows

Preheat electric griddle to 350° or heat a nonstick skillet over medium heat.

In a medium sized mixing bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.

Whisk in egg and milk until most of the lumps are gone and then stir in the marshmallows and chocolate chips.

Pour batter onto griddle or skillet and cook 4-5 minutes, until bubbles rise up and pop. Flip and cook another 4-5 minutes on the other side.

While pancakes are cooking, heat the cream in a microwave safe dish for about 30-40 seconds, until very hot. Add in chocolate chips and let them rest with the hot cream covering them for 5 minutes, then whisk until smooth.

Remove cooked pancakes from griddle to plates and top with chocolate topping and mini marshmallows.
