Who doesn’t love a good hot sandwich? Mine and my husband’s favorite place to get hot sandwiches is Firehouse Subs, and we each have a go-to order there. My husband loves their veggie sub, while I adore their beef and cheddar brisket. Since eating out all the time is cost prohibitive, I set out to develop copycat recipes for these two favorites so we can enjoy them frequently without breaking the bank. The veggie sub came first, and today I’m sharing this recipe for Roast Beef & Cheddar Barbecue Subs as a homemade version of the brisket sub.

These subs are super easy and quick to make, and really hit the spot! Just layer some mayo, beef, bbq sauce, and cheese onto sub rolls and bake until warm and melty. Then you just serve with a pickle and chips, and enjoy! And the type of ingredients you use isn’t important — feel free to customize. The sub rolls can be white or wheat, you can use thin or thick cut deli roast beef, and whatever your favorite bbq sauce is will work great (I use Sweet Baby Ray’s. That’s not an add, I just think all varieties of that brand are yummy).
The recipe I share below feeds two to four people, depending on how hungry you are and if you have anything else to go with it. You can also easily double or triple the ingredients if you want to feed a crowd, just plan on upping the bake time by a few minutes if you have more sandwiches in the oven.
The bottom line is that these hot subs are seriously good, and are great make-at-home options if you can’t or don’t want to go out. So good!
- 2 large sub rolls
- 4-6 tbsp mayonnaise
- 1/2 lb deli roast beef slices
- 1/3 cup barbecue sauce
- 4 slices cheddar cheese

Preheat oven to 350°. Slice sub rolls in half and place on a baking sheet. Spread 1 to 1/12 tablespoons of mayo on each half, according to your preference. Divide the roast beef and layer on one half of each split sub roll, then top with your favorite barbecue sauce to taste (I like about 1/3 cup for two subs when I make this). Cover the bbq sauce and beef with two slices of cheese per sub, and insert the sandwiches open faced into the oven. Bake for 5-7 minutes, until cheese is melted and beef is warm.
