I have to be honest with you here — I’m a dessert junkie, and sometimes I need a fix quickly.

Enter this five minute Chocolate Peanut Butter Mug Brownie. It’s hot, it’s gooey, it’s chocolatey, and it’s absolutely delicious. What’s not to love about something fast and sweet?

Also, this recipe is designed to make just one mug brownie, but it’s super easy to line up a set of mugs and make one for each member of your family. You just add one minute per extra mug to your overall prep time since you have to cook them separately.

Ingredients

It’s really a very simple recipe and I would be surprised if you don’t already have most if not all of the ingredients in your pantry right now. One thing I don’t like about a lot of mug cake or brownie recipes I’ve seen is that many of them call for part of an egg. This gets on my nerves for two reasons, firstly because I don’t want to just throw away half an egg, and second because I can see how some people (not me because I like to live on the edge) would worry about the egg not getting thoroughly cooked in the microwave.

This recipe is egg free, so no worries. I’ll also go ahead and tell you that you can absolutely sub in other nut butters if PB doesn’t work for you. There’s nothing magic about peanuts, any old nut butter will work here.

Cooking It

This brownie is cooked in the microwave rather than an oven, which makes it ideal for students in dorm rooms. And I haven’t tried this yet, but I suspect that you could mix this up ahead of time in a mason jar or small bowl with a lid and pack it in your lunchbox to cook at work in the office microwave. If anyone tries that theory out, let me know how it works! I don’t see any reason why it wouldn’t be successful, but ya never know.

Serving a Crowd

Ideally we would all be on top of our game and always plan ahead, prepping dishes well in advance of when we want to serve them. But since this is real life, just know that you can certainly make a batch of these single-serve mug brownies for everyone in your family. They do have to cook individually for best results, so it will take slightly longer, but it will still be way, wayyyy faster than baking a whole pan of brownies.

Ingredients
  • 1/4 cup sugar
  • 3 tbsp all-purpose flour
  • 2 tbsp cocoa
  • 1-2 pinches salt
  • 1 tbsp oil
  • 3 tbsp water
  • 1/4 tsp vanilla
  • 1 tbsp peanut butter
  • 1 tbsp chocolate chips
Instructions
  1. Place the dry ingredients in a microwave safe mug or small bowl and mix together.

  2. Add in the wet ingredients up through the vanilla and mix again.

  3. Drop the peanut butter on top and gently press it in a bit, then sprinkle the chocolate chips over top.

  4. Microwave on high for about 1 minute (add an additional 20 seconds if your microwave isn't very powerful). Let cool for a minute or two, then enjoy!

  5. *Optional: skip the cooling phase and just drop a scoop of ice cream on top.
