Hot Chocolate Pancakes

Ingredients

Pancakes:

  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1/4 cup cocoa
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 1/3 cup milk
  • 1 cup mini marshmallows
  • 1/3 cup chocolate chips

Topping:

  • 1/3 cup heavy cream
  • 1/2 cup chocolate chips
  • 3/4 cup mini marshmallows

Instructions

  1. Preheat electric griddle to 350° or heat a nonstick skillet over medium heat.

  2. In a medium sized mixing bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.

  3. Whisk in egg and milk until most of the lumps are gone and then stir in the marshmallows and chocolate chips.

  4. Pour batter onto griddle or skillet and cook 4-5 minutes, until bubbles rise up and pop. Flip and cook another 4-5 minutes on the other side.

  5. While pancakes are cooking, heat the cream in a microwave safe dish for about 30-40 seconds, until very hot. Add in chocolate chips and let them rest with the hot cream covering them for 5 minutes, then whisk until smooth.

  6. Remove cooked pancakes from griddle to plates and top with chocolate topping and mini marshmallows.
