Heat a griddle or large nonstick pan over medium heat. While it heats, whisk together dry ingredients in a medium sized bowl. Beat in wet ingredients until fairly smooth, then stir in sprinkles. Cook the pancakes for 3-4 minutes on each side, until done.
While the pancakes cook, whisk together powdered sugar, milk, and vanilla to make glaze. Stack the cooked pancakes on plates and top with glaze and extra sprinkles.
