Crockpot Chicken Tetrazzini

Maybe it’s because life just keeps getting busier, but I’m on a roll with the crockpot meals this month! This one is my husband’s (and this is a direct quote here) “favorite meal that you make in the crockpot”. High praise, indeed.

I do have one disclaimer for this recipe, and that is that it doesn’t look nearly as good as it tastes. I did the best I could with the pictures, but it just doesn’t look particularly colorful or appetizing, even off-camera. Don’t let that stop you! If you just trust me and make this meal you will be glad when you taste how creamy and yummy it is, plus how quick it is to make!

Dump everything but the cheeses and noodles into the crockpot, cover, and walk away for 4 – 8 hours.

At the end of the cooking time it will look like this, with the chicken falling apart easily when you poke it with a fork. At this point you should throw the block of cream cheese in there and begin cooking your noodles in a pot on the stove.

When the noodles are done you can stir in the cream cheese (which also shreds your super tender chicken), then toss the cooked noodles and mozzarella in the crockpot and give it all a stir.

Serve immediately and enjoy!

Crockpot Chicken Tetrazzini
Prep Time: 20 minutes
Cook Time: 4-8 hours
Serves 4

1 chicken breast
1 medium white onion, diced
2 cups sliced mushrooms
1 cup chicken broth
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 tsp dried oregano
1 (8oz) package cream cheese
1/2 lb linguine noodles
2 cups shredded mozzarella

Place the chicken breast, veggies, broth, and seasonings in a crockpot and cook on high for 4 hours or low for 8 hours. At the end of that time, drop the block of cream cheese into the crockpot and put the lid back on. Allow the cream cheese to melt while you cook the noodles in hot water on the stove. When the noodles are almost done, stir the cream cheese in with the other ingredients in the crockpot until smooth (which shreds the chicken in the process), then drain the noodles and add them in along with the mozzarella. Give it all a good stir and serve while hot.
