I know what you’re thinking – ‘Another recipe for oats? This girl is crazy for overnight oats!’ Well, you’re not wrong. I love the convenience of overnight oats, not to mention that they are filling and usually pretty healthy. I decided to put a seasonal spin on my usual oats with this recipe for Gingerbread Overnight Oats because in my mind gingerbread equals Christmas. I also equate peppermint with Christmas, but somehow I don’t think peppermint oats sound very appealing.
Anyway, these Gingerbread Overnight Oats are easy and delicious for breakfast or to throw in your lunch box, as I often do. Plus we are still in the middle of the shabby/chic craze in which anything inside a mason jar has immediate added appeal, so there’s that. You can have a stylish meal right at your fingertips with any overnight oats recipe. I’ll include a few more recipes here just in case you want to browse a bit:
Maple Walnut Overnight Oats
Cow Patty Overnight Oats
Pumpkin Pie Overnight Oats
Basic Overnight Oats
There’s that fashionable jar I was telling you about! Bonus points if it has a handle on it so it can double as a drink receptacle.
- 3/4 cup oats
- 1 tbsp brown sugar
- 1 tbsp granulated sugar
- 1 tbsp molasses
- 1/2 tsp pumpkin pie spice
- 1/8 tsp ginger
- 1/8 tsp salt
- 1 cup milk

Add all ingredients to a pint sized jar in the order listed. Put the lid on tightly and shake until combined thoroughly. Refrigerate 4 hours or overnight and serve cold or heat in the microwave for about 1 minute. Garnish with extra cinnamon, if desired.
I haven’t made overnight oats in far too long! This sounds amazing, I love gingerbread flavor all throughout this season 🙂
