If you’ve been here before you are probably already aware of my undying affection for pancakes of all kinds. There are a million reasons to love pancakes, and my family eats them A LOT. We certainly eat them for breakfast, but we also eat them as a speedy, crowd-pleasing dinner not infrequently as well.
Seriously, I never hear “I don’t like this dinnerrrr!” when I makes any kind of pancakes. I’m sure your kids never complain about their food, it’s fine.
Today I’m sharing my un-recipe for strawberry shortcake pancakes. I call it an un-recipe because it’s so simple that it feels dishonest to call it a real, true recipe. Basically you make some pancakes and put some strawberries and whipped cream on top. Super complicated, I know.
But despite the simplicity of this dish, it continues to be one of my favorite ways to eat pancakes. It tastes so wholesome and satisfying to me, I just can’t get enough of them. (And here’s a pro-tip for free: add blueberries and suddenly this dish is patriotic).
This recipe actual doesn’t even call for any additional sugar, because I find the strawberries are sweet enough on their own and also whipped cream has a natural hint of sweetness as well. I’ve tried it with a couple of tablespoons of sugar in the batter and I just didn’t like it as well.

One last thing — I never miss an opportunity to promote my favorite electric griddle that I use to cook pancakes (and other stuff) on. - 1 1/2 cups all-purpose flour (I prefer unbleached)
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 cup milk
- 1 1/2 – 2 cups sliced strawberries
- 1 cup heavy cream*

Preheat a large nonstick pan or electric griddle to medium heat. Whip cream in a stand mixer or with an electric hand mixer and set aside. Whisk together pancake mix, egg, and milk until smooth. Pour the batter into 4-5 inch circles and cook for about 3-4 minutes on each side, until golden brown and firm. While the pancakes are cooking, slice strawberries and set aside. Stack cooked pancakes on plates and top with strawberries and whipped cream.
*2 cups of store-bought whipped topping can be substituted for homemade whipped cream.
