So here’s the thing: I really love pancakes. I like that they are a quick, easy, filling breakfast that my whole family will enjoy without complaint. I like that there are endless variations to try so that you never get bored. And I like that you can choose to make healthy pancakes or pancakes that are borderline dessert, like Red Velvet Pancakes.

Yes, my friends, I said Red Velvet Pancakes.

These guys are so, so yummy and are way easier to make than it seems like they should be. It only takes me about 20 minutes from deciding to make them to setting full plates on the table to eat. This recipe will feed somewhere between 3 and 4 people, depending on your appetite for sweet breakfasts. Generally I divide the batter into six equal pancakes and serve two each to myself and my husband, and one each for the two kiddos.

I most often make Red Velvet Pancakes on the weekends when we have time to savor them slowly. Typically during the week we make smoothies or plain pancakes, so they seem like a nice treat on a slow Saturday morning.

I really just love red velvet in general (except for one red velvet cake that I tasted about 10 years ago with icing that tasted like mayonnaise; I still shudder when I remember it). Red Velvet Pancakes

Ingredients
Pancakes:
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 2 tbsp cocoa
  • 1 egg
  • 1 1/4 cup milk
  • 1 tbsp red food coloring
Cream Cheese Topping:
  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 tsp vanilla
Instructions
  1. Heat a nonstick pan or electric griddle on medium heat. Whisk together pancake mix, sugar, cocoa, egg, and milk until smooth. Whisk in red coloring until thoroughly combined. Pour the batter into 4-5 inch circles and cook for about 3-4 minutes on each side, until cooked through. While pancakes are cooking, beat together the cream cheese, powdered sugar, milk, and vanilla until smooth. When the pancakes are done, move to a plate and top with cream cheese topping.
