Heat a nonstick pan or electric griddle on medium heat. Whisk together pancake mix, sugar, cocoa, egg, and milk until smooth. Whisk in red coloring until thoroughly combined. Pour the batter into 4-5 inch circles and cook for about 3-4 minutes on each side, until cooked through. While pancakes are cooking, beat together the cream cheese, powdered sugar, milk, and vanilla until smooth. When the pancakes are done, move to a plate and top with cream cheese topping.
