Pumpkin Spice Mug Cake

A sweet fall-flavored treat that you can make in 5 minutes!

Jump to Recipe

Fall is my favorite season for many reasons, not the least of which is the associated flavors. I love all things apple, pumpkin, and cinnamon this time of year. Anything that tastes “cozy” gets two thumbs up from me once the ‘ber’ months arrive!

I also love a sweet treat, especially one that can be ready quickly in case of sugar emergencies (those are a thing; if you don’t know what I’m talking about, this might not be the place for you).

This recipe is seriously easy, and made with ingredients that you probably already have in your pantry—as long as you’re a person who keeps pumpkin puree on hand. All you do is melt the butter in the mug, stir in the wet ingredients, then the dry ingredients. The batter will be thick, like in the photo below, but once you microwave it for about 90 seconds, it will puff up and be a moist, tender little cake in a cup.

Voila! A fun, festive fall dessert that you’ll want to make on repeat.

Optional toppings to make this mug cake even better—if you happen to have one of them on hand—are a drizzle of caramel or a scoop of vanilla ice cream or a dollop of whipped cream. This mug cake is amazing all on it’s own, but if you’re feeling extra, you have options! Also, I wouldn’t judge you if you made this for breakfast sometimes. Leave out the white chocolate and add a tablespoon of maple syrup on top, and it’s basically a pumpkin pancake with way less dishes and cooking time. Ask me how I know.

And while this recipe is designed for only a single mug, it’s very easy to make an assembly line of sorts to make multiple cakes at one time. Just be sure to microwave each one separately to ensure that they’re all fully cooked.

  • 1 tbsp butter
  • 2 tbsp pumpkin puree (not pie filling)
  • 3 tbsp brown sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla
  • 1/4 c flour
  • 1/4 tsp baking powder
  • 1/2 tsp pumpkin pie spice
  • 1 pinch salt
  • 1-2 tbsp white chocolate chips (optional)
Instructions
  1. Place the butter in a microwave safe mug and microwave for about 30 seconds, until melted.

  2. Add the pumpkin, sugar, milk, and vanilla, and stir until smooth.

  3. Add the flour, baking powder, pie spice, and salt, and stir again. Don't worry if it's a little lumpy. Your mixture should be very thick.

  4. Stir in white chocolate if using, saving a few to sprinkle on top.

  5. Microwave for about 1 to 2 minutes, depending on the strenght of your microwave. Mine come out perfectly after 90 seconds. Serve immediately.
