Creamy Lemon Spinach Penne

Lemon is one of my favorite flavors because it’s so versatile. You can have it for breakfast, like in this coffee cake. You can have it for dessert, like in these cookies. And you can even have it for lunch or dinner in Creamy Lemon Spinach Penne.

What I really love about this recipe is the combination of lemon and rosemary in the sauce. It’s literally making my mouth water right now just thinking about it. Those flavors plus a little garlic and cream makes for an incredible creamy, savory sauce that coats the penne pasta to perfection.

Another big plus is that it’s pretty quick and easy to make. Of course if you’ve known me long, you know I’m all about food that’s quick and easy, as long as it’s also delicious, and this Creamy Lemon Spinach Penne is all of those things in one. And since it’s pasta it’s generally a crowd pleaser. I’ll tell you that my three year old eats a plateful of it as an endorsement of it’s kid-friendliness.

Ingredients
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • 1 1/2 cups spinach, chopped and packed
  • 2 tbsp lemon juice
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/2 tsp dried rosemary
  • 1/4 cup shredded parmesan
  • 2 1/4 cups penne pasta
  • Extra parmesan for garnish
Instructions
  1. Fill a small pot with water and bring to a boil. In a separate pan melt butter, then add garlic, spinach, and lemon juice. Cook until the spinach is wilted, about 3 minutes, then add cream, salt, rosemary, and parmesan. Simmer on low, stirring occasionally, for about 15 minutes, until the sauce is thick and creamy. In the meantime, cook the pasta in the boiling water according to package directions. When the pasta is cooked and the sauce is thick, drain the pasta and add it to the sauce. Toss to coat, and garnish with extra shredded parmesan if desired.

    I’m doing the keto diet so I can’t have pasta, but I think I may substitute some zucchini noodles in place of the penne for me, and make the regular version for the kiddos!

  2. I love lemon. Man, this pasta sounds so good. You are right, the flavor profiles are very simple and pleasing for kids. My babies would enjoy this dish. Now, I’m going to check out your coffee cake recipe you mentioned 🙂
