Skillet Chocolate Chip Brookie

Whenever you can take two really great things and put them together to make something sensational, you really should do it. Nothing provides a better example of this principle than the brookie.

What’s a brookie? I’m so glad you asked! In the words of my sister (whose name happens to be Brook, though I’m sure that has nothing to do with her feelings on the matter), a brookie is “half brownie, half cookie, all fantastic.”

I can’t possibly top that description.

There are lots of different ways to make a brookie. Some people make them individually on a cookie sheet, some make them in cake pans so that they come out like bars. I like to bake mine in a cast iron skillet (affiliate link) and serve it in wedges, like a pie.

Brookies are really very simple to make, although they do take a little bit of prep time since you are essentially making two separate desserts before combining them into one. First you mix up your cookie dough and press it into the pan, then you mix up the brownie batter and pour it in to fill in the gaps. Step three is bake, and step four is enjoy! Step five is try really hard not to eat the whole thing (we’ve never done that (ok, yes we have (don’t judge me))).

You can serve it plain, which is totally yummy, or you can put a scoop of ice cream on top for that creamy, melty, temperature contrast that people love with warm desserts. Hubs prefers it with ice cream, but I don’t have a preference — it just depends on my mood. I will say that letting it cool for a little while before trying to serve it is helpful no matter which way you eat it. It takes a few minutes for it to set after you bake it. You can certainly eat it straight out of the oven, but it won’t look very pretty and will be very hot!

This brookie recipe uses a classic chocolate chip cookie dough. I’ve considered trying it with peanut butter cookie dough, but haven’t made the leap yet. So many desserts, so little time! If you’ve tried a different version, let me know in the comments! Tell me if I should make it happen or not.

Ingredients
Cookie Dough:
  • 1 stick butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup chocolate chips
Brownie Batter:
  • 4 tbsp butter, melted
  • 2/3 cup sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 cup flour
  • 1/3 cup cocoa
  • 1/8 tsp salt
Instructions
  1. Preheat oven to 350° and prepare your skillet by coating with butter or nonstick spray, then set aside.

  2. Mix the cookie dough first. Beat together the butter, sugars, and vanilla until smooth, then beat in the egg. Add the dry ingredients and mix until combined, then stir in the chocolate chips. Drop scoops of cookie dough into the prepared skillet and press them so that the tops of the scoops are pretty even with each other. Set aside.

  3. Prepare the brownie batter by beating the melted butter, sugar, vanilla, and egg, then stir in the dry ingredients. Pour the batter in around the cookie dough in the skillet to fill in the gaps between the dough scoops. You can shake the skillet a little to help the batter settle in to the cracks more evenly.

  4. Place the brookie in the oven and bake for 23-25 minutes, until it is just set. It will look shiny and not quite done in the very center, but it will continue to cook a little after you've removed it. Let the brookie cool for a little while (an hour or so is best) before serving.
