If I post anymore pancake recipes I’ll have to rename this blog to Read. Eat Pancakes. Repeat. But surely we can handle just one more…because these Funfetti Pancakes are just way to good to ignore.

Funfetti pancakes are exactly what they sound like. They are a sweet, vanilla flavored pancake with sprinkles in the batter and vanilla glaze and sprinkles on top. They are perfect for pretty much every occasion – weekend or birthday breakfasts and dinner when I don’t have much time are when I typically make them, but if you want to make them on a random Tuesday I would be in full support of that.

Making funfetti pancakes is easy enough that you can get your kids involved, and since kids love anything related to sprinkles they will most certainly thank you for including them in the process. Plus I know from first hand experience that if they go to college already knowing how to cook a little their roommates will be majorly impressed. Homemade meals are valuable currency on campuses, even if it’s just pancakes.

But let’s not get ahead of ourselves here. As I was saying, funfetti pancakes are simple to make. You start with a plain pancake batter, add sugar, vanilla, and sprinkles, then cook them like normal. While they cook, you mix up a simple glaze, and when they are ready you just plate them and glaze them, adding a few more sprinkles on top for good measure. Presentation is everything with funfetti.

Another fun thing about funfetti pancakes is that they are easy to adapt for holidays. Use red and green sprinkles at Christmas time or orange at black at Halloween for a fun holiday treat that takes very little effort but gets a big reaction, especially from kiddos.

Also, I cannot talk about pancakes without mentioning my favorite electric griddle that is one of the best gifts my husband ever surprised me with (affiliate link). I’ve had it for years and it still works great. The nonstick surface is still intact and it makes cooking pancakes (or bacon or eggs or burgers or grilled cheese or quesadillas) so easy.

Ingredients
Pancakes
  • 1 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 1/2 tsp vanilla
  • 2 tbsp sprinkles
Glaze
  • 2 1/4 cup powdered sugar
  • 3 tbsp milk
  • 1/2 tsp vanilla
  • Extra sprinkles for topping
Instructions
  1. Heat a griddle or large nonstick pan over medium heat. While it heats, whisk together dry ingredients in a medium sized bowl. Beat in wet ingredients until fairly smooth, then stir in sprinkles. Cook the pancakes for 3-4 minutes on each side, until done.

  2. While the pancakes cook, whisk together powdered sugar, milk, and vanilla to make glaze. Stack the cooked pancakes on plates and top with glaze and extra sprinkles.

Whipped cream is also a yummy topping for these pancakes.
