Do you like dessert for breakfast? Then these Cookies & Cream Pancakes will knock your socks off!

I’m a huge pancake fan, for several reasons. For one thing, they are quick and easy to prepare, which makes them ideal for when you need to get something on the table fast.

They are also a crowd-pleaser, meaning pretty much everybody has a smile on their face when they sit down to pancakes, no matter what time of day it is (anyone else do pancakes for dinner sometimes?).

And as if all that wasn’t enough, they are so easy to customize! There are a million different ways to make pancakes and I’m on a mission to try them all.

The moral of this story is that pancakes are the best, am I right?

Today I’m sharing the newest pancake recipe that my family has been enjoyed, Cookies & Cream Pancakes. Infused with crushed chocolate sandwich cookies and garnished with a whipped cream cheese topping, they are just an utter delight.

And even though they look kind of fancy, they are really easy and pretty quick to make. You can even prepare some parts in advance to save you time in the morning (or evening; I can’t preach pancakes for dinner enough).

In my opinion, the key to making consistently great pancakes of any kind is having the right tool to cook them with. You want a nonstick skillet or griddle that works really well, so that you don’t have to grease it. And the bigger the surface area the better, so that you can make enough pancakes at once to feed everyone fresh, warm food at the same time.

My griddle of choice is the Presto Electric Griddle. I’ve had this thing for years and it still looks and cooks like it was new. You can fit about six large pancakes or eight smaller ones at a time, and, of course, you can cook other foods on it as well. It’s very affordable and it has removable handles, which makes it super easy to wash and store.

Aside from something to cook them with, you’ll also need a mixing bowl, measuring cups, measuring spoons, a spatula, and a whisk or mixer to make your Cookies & Cream Pancakes.

And one final note — don’t feel like you have to buy name brand cookies for this recipe. If you want to go with Oreos then go for it! But store brand sandwich cookies will taste great in these too.

Ingredients
  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 10 chocolate sandwich cookies, finely crushed
  • 1 egg
  • 1 cup milk
  • 4 oz cream cheese, softened
  • 3/4 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla
Instructions
  1. Begin by preheating a skillet or griddle to medium heat (about 350°). While it heats, whisk together the flour, sugar, baking soda & powder, salt, and crushed cookies. Whisk in the egg and milk until fairly smooth (there will likely be some lumps from the cookies), and then pour the batter onto your skillet or griddle.

  2. Cook the pancakes about 4-5 minutes, until the tops are bubbly, then flip and cook another 4-5 minutes on the other side. While the pancakes are cooking, use a hand mixer or stand mixer to whip together the cream cheese, heavy cream, sugar, and vanilla until fluffy, about 4-5 minutes. It will have the consistency of very thick whipped cream when it is finished.

  3. Remove the cooked pancakes and place them on plates. Allow them to cool for 2-3 minutes before adding the topping so that it doesn't melt and slide off. Garnish with en extra cookies if desired.
