Mocha Latte Overnight Oats

I’m not sure what this says about me (or perhaps the season of life I’m in?), but most of the recipes I have published so far in 2019 have contained at least a little chocolate. Here’s a list of the recipes I’ve put out so far, with an asterisk marking the ones that include chocolate:

Look at that list! That brings the total to a whopping 5 out of 7 chocolate based recipes so far this year. That’s 71% chocolate, and you know what? I’m not even sorry. I’ll post a veggie recipe next month to bring us back towards center, but in the meantime I’m going to enjoy my Mocha Latte Overnight Oats with no shame.

Overnight oats are a staple for me because they are healthy, tasty, and easy, especially if you like to prep your meals ahead of time. Walking into the kitchen to a breakfast that is ready for you to pull out of the fridge and eat is such a luxury, especially on busy school mornings. And maybe you don’t want to share this particular one with the kiddos (because of the caffeine and all), but my girls love a bunch of other overnight oats recipes. Their favorite is Cow Patty Overnight Oats, but we also like Maple Walnut, Gingerbread, and Pumpkin Pie oats as well. And of course, you can’t go wrong with just plain oats and honey.

I seriously have a lot of words to say about oatmeal, and overnight oats in particular. They just check so many boxes for me, and they keep you full for long time. I love how versatile they are. It doesn’t take much to come up with a yummy new combo to keep your oat game fresh, and oats are so cheap, man! Oats are great. These Mocha Latte Overnight Oats are super great.

Mocha Latte Overnight Oats

Ingredients
  • 3/4 cup quick cooking oatmeal
  • 2 tbsp cocoa
  • 1/3 cup brewed coffee
  • 1/2 cup milk, any variety
  • 2 tbsp honey
  • Optional chocolate chips to garnish
Instructions
  1. Place all ingredients in a pint sized mason jar and shake to combine. Refridgerate at least 4 hours, or overnight. Serve with chocolate chips on top if desired.
